Turkey Taco Salad

Looking for a new salad to try this summer? This is a delicious and easy salad the whole family will love. Great with homemade salsa and guacamole too!

Turkey Taco Salad

1 pound free-range, organic, ground turkey

2 tablespoons tomato paste

2-3 teaspoons chili powder

1½ teaspoons ground cumin

¼ teaspoon garlic powder or fresh chopped garlic clove

¼ teaspoon onion powder or 1/2 cup chopped fresh onion

¼ teaspoon paprika

1 teaspoon sea salt

½ teaspoon black pepper

½ cup organic broth (or filtered water)

 

Servings: 4 Prep: 10 minutes Cook: 25 minutes

Brown the turkey in a skillet over medium-high heat. Drain meat and put back in skillet with all of the spices and broth. Simmer about 15 minutes, stirring occasionally.

 

Serving Suggestions: Serve over fresh lettuce with shredded raw cheese, tomatoes, black olives, black beans, sour cream or yogurt, and crumbled organic blue chips (optional). Great with Salsa, page 187 and Guacamole, page 184.

    I have your recipe for turkey taco salad. I have a child that is gluten, dairy, soy, corn and rice intolerant. She is also allergic to grains. Can you give me some direction on how I would alter these recipes to fit her needs. I am really having a rough time with changing things up for her.

      The turkey meat and spices (use gluten/soy-free spices) themselves would be fine and then you could just leave off cheese and sour cream and use salsa and guacamole as your toppings over the lettuce. If there is something you have at home that is crunchy like a cracker she can have then you could just crumble that up on top instead of corn chips.
