OMG is what I said when I tasted this pudding! Rich and chocolaty, plus, it has healthy fats in it – how can you go wrong?
Serves 4
- 2 ripe organic avocados
- 1⁄2 cup whole organic coconut milk
- 1⁄4 cup grade B organic maple syrup (or add to taste)
- 1⁄2 cup raw organic cacao powder
- 1⁄2 teaspoon pure organic vanilla extract
- 1⁄8 teaspoon Celtic Sea Salt
Blend all ingredients in a food processor and serve. Can be served room temperature or chilled. Fresh strawberries or raspberries are delicious with this pudding! I have added this to my weekly meal planner. Check out Plan to Eat if you are looking for a great way to store recipes and plan meals. Variations to try include using honey or stevia or a combination of natural sweeteners!
Hi Sheryl, I make this same recipe with stevia and it works wonderfully. It doesn’t take much stevia to add that little bit of needed sweetness. Thanks for sharing this great recipe. The berries are a real taste treat!!
Fantastic – that is a great to use stevia!
Sheryl,
What is considered the size of the serving?
And how many calories are in each serving?
I personally only eat about 1/4 cups (sometimes a 1/2 cup!!!) because its so rich you don’t need much. I do not count calories nor promote counting calories so I don’t offer them for a recipe I apologize. You could enter it into a calorie counting app to find out though:)
Hi Sheryl, I make this with almond milk and a touch of raw honey. This recipe sounds very sweet. Have you tried less syrup?
Yes! You can use less syrup or even honey. However, if you use almond milk it is higher in sugar/carbohydrates though, which is why I suggest the coconut milk so the sugar impact on the body is much less.
